2 lbs ground beef (80/20 recommended)
1 box (6 oz) Stove Top Stuffing Mix (Savory Herb or Turkey flavor)
1 cup water
2 large eggs, lightly beaten
1/2 cup milk
1/4 cup ketchup, plus more for glaze
1 teaspoon onion powder
1/2 teaspoon black pepper
1/4 cup balsamic vinegar
2 tablespoons brown sugar
Instructions
Preheat your oven to 350°F (175°C). Lightly grease a 9×5 inch loaf pan.
In a large bowl, combine the Stove Top Stuffing Mix, water, eggs, milk, 1/4 cup ketchup, onion powder, and pepper. Let the mixture sit for 5 minutes to allow the stuffing to absorb the liquid.
Add the ground beef to the stuffing mixture. Use your hands to gently mix the ingredients until they are just combined. Do not overmix, as this can make the meatloaf tough.
Press the meat mixture evenly into the prepared loaf pan.
In a small bowl, whisk together 1/4 cup ketchup, balsamic vinegar, and brown sugar to create the glaze. Spread half of this glaze evenly over the top of the meatloaf.
Bake for 45 minutes.
Remove the meatloaf from the oven and spread the remaining glaze over the top.
Return the meatloaf to the oven and bake for another 15 to 20 minutes, or until the internal temperature reaches 160°F (71°C).
Let the meatloaf rest in the pan for 10 minutes before slicing and serving.
Notes
For an even juicier result, use 85/15 ground beef instead of 80/20.
You can substitute ground turkey for ground beef for a lighter, yet still flavorful, option.
If you prefer a classic topping, skip the balsamic glaze and use a mixture of 1/2 cup ketchup and 2 tablespoons of Worcestershire sauce instead.
