Make this rich, creamy, and cheesy sausage cream cheese dip for your next gathering. This simple appetizer uses only three main ingredients and is perfect for game day or parties. You can prepare it easily on the stovetop or in a slow cooker.

  • 1 pound breakfast sausage, cooked and drained
  • 1 (8 ounce) package cream cheese, softened
  • 1 (10 ounce) can diced tomatoes and green chilies (Rotel), undrained
  • 1 cup shredded cheddar cheese (optional, for extra cheesiness)
  • 1 teaspoon onion powder (optional)

Instructions

  1. If using a stovetop, brown the breakfast sausage in a large skillet over medium heat. Drain off all excess grease thoroughly.
  2. Reduce the heat to low. Add the softened cream cheese and the can of diced tomatoes and green chilies (with their liquid) to the skillet with the cooked sausage.
  3. Stir constantly until the cream cheese is fully melted and the mixture is smooth and creamy. If using, stir in the optional cheddar cheese and onion powder until melted.
  4. If using a slow cooker, combine the cooked and drained sausage, cream cheese, and Rotel (with liquid) in the slow cooker insert. Stir well.
  5. Cook on LOW for 1 to 2 hours, stirring occasionally until completely heated through and smooth. If using optional ingredients, stir them in during the last 30 minutes.
  6. Transfer the hot sausage cream cheese dip to a serving bowl. Serve warm with tortilla chips, crackers, or vegetable sticks.

Notes

  • For a richer flavor, use spicy Italian sausage instead of breakfast sausage.
  • If the dip thickens too much while serving, stir in one tablespoon of milk or heavy cream to restore creaminess.
  • This dip is excellent made ahead. Cool completely, store in an airtight container in the refrigerator for up to 3 days, and reheat slowly on the stovetop or in the slow cooker.
