Make tender roasted sweet potatoes with crispy edges using a simple technique. This easy recipe is a healthy side dish perfect for weeknight dinners or holiday meals.

  • 3 large sweet potatoes, scrubbed and cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika (optional, for color)

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit (220 Celsius). Set the oven rack to the middle position.
  2. Place the cubed sweet potatoes in a large bowl.
  3. Drizzle the sweet potatoes with olive oil. Toss them well until every piece is lightly coated.
  4. In a small bowl, mix together the salt, pepper, garlic powder, and paprika. Sprinkle this seasoning mix over the oiled sweet potatoes and toss again until evenly seasoned.
  5. Spread the seasoned sweet potatoes onto a large, rimmed baking sheet in a single layer. Do not overcrowd the pan; use two sheets if necessary to ensure crispiness. This step is key for achieving crispy roasted sweet potatoes.
  6. Roast for 20 to 25 minutes. Flip the potatoes halfway through the cooking time.
  7. Continue roasting until the edges are caramelized and slightly browned, and the centers are tender when pierced with a fork.
  8. Remove from the oven and serve immediately as a tender sweet potato side dish.

Notes

  • For extra crispiness, toss the potatoes in 1 tablespoon of cornstarch along with the oil before seasoning.
  • To make honey roasted sweet potatoes, drizzle 1 tablespoon of honey over the potatoes during the last 5 minutes of roasting.
  • For garlic roasted sweet potatoes, add 1 teaspoon of minced fresh garlic during the last 5 minutes of roasting to prevent burning.
