1/2 cup (1 stick) unsalted butter, melted
2 large eggs
1 cup white chocolate chips
Instructions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a medium bowl, combine the entire box of red velvet cake mix, the melted butter, and the eggs. Mix with a spoon or electric mixer until just combined into a thick dough. Do not overmix.
Gently fold in the white chocolate chips.
Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake for 9 to 11 minutes. The edges should be set, but the centers should still look slightly soft for a chewy texture.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
