  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon toasted sesame seeds
  • 1 green onion, thinly sliced (for garnish)

Instructions

  1. Prepare the carrots: Use a vegetable peeler to shave the carrots into thin ribbons. Stop when you reach the core. Discard the cores.
  2. In a small bowl, whisk together the dressing ingredients: soy sauce, rice vinegar, honey, sesame oil, Dijon mustard, and red pepper flakes, if using. Mix until the honey dissolves.
  3. Place the carrot ribbons in a medium bowl. Pour the dressing over the ribbons.
  4. Toss the carrots gently with tongs until they are evenly coated with the dressing.
  5. Stir in the toasted sesame seeds.
  6. Let the salad sit for 5 minutes to allow the flavors to meld.
  7. Garnish with sliced green onion before serving immediately.
