  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup fresh orange juice
  • 1 tablespoon fresh orange zest
  • 1/4 cup whole milk
  • 1 cup powdered sugar (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or a standard loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set this dry mixture aside.
  3. In a large bowl, use an electric mixer to cream the softened butter and granulated sugar together until the mixture is light and fluffy, about 3 minutes.
  4. Beat in the eggs one at a time, mixing well after each addition.
  5. In a separate small bowl, whisk together the fresh orange juice and orange zest.
  6. Gradually add the dry ingredients to the butter mixture, alternating with the orange juice mixture, beginning and ending with the dry ingredients. Mix only until just combined; do not overmix.
  7. Stir in the milk gently until the batter is smooth.
  8. Pour the batter into your prepared pan and spread it evenly.
  9. Bake for 30 to 35 minutes, or until a wooden pick inserted into the center comes out clean.
  10. Let the cake cool in the pan on a wire rack for 10 minutes.
  11. While the cake cools slightly, prepare the glaze: Whisk the powdered sugar and 2 tablespoons of fresh orange juice together until smooth. Add more juice, 1 teaspoon at a time, until you reach a thick but pourable consistency.
  12. Invert the cake onto the wire rack. Drizzle the bright citrus glaze evenly over the warm cake. Allow the glaze to set before slicing and serving.

  • For maximum flavor, use fresh-squeezed orange juice and finely grated zest from two oranges.
