  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 4 cups beef or vegetable broth
  • 1 cup water
  • 8 ounces lasagna noodles, broken into 1-inch pieces
  • 1/2 cup heavy cream (optional, for richness)
  • 1 cup fresh spinach, roughly chopped
  • 1 cup ricotta cheese, divided
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the ground meat and cook until browned. Drain off any excess fat.
  2. Add the chopped onion to the pot and cook until softened, about 5 minutes. Stir in the minced garlic, oregano, basil, salt, and pepper. Cook for 1 minute until fragrant.
  3. Pour in the crushed tomatoes, tomato sauce, broth, and water. Bring the mixture to a boil.
  4. Add the broken lasagna noodles to the boiling liquid. Reduce the heat to maintain a simmer. Cook, stirring occasionally to prevent sticking, for 10 to 12 minutes, or until the pasta is tender.
  5. Stir in the heavy cream, if using, and the fresh spinach. Cook until the spinach wilts, about 1 minute.
  6. Remove the pot from the heat. Stir in 1/2 cup of the ricotta cheese until it melts into the soup, creating a creamy texture.
  7. Ladle the soup into bowls. Top each serving with a dollop of the remaining ricotta cheese, a sprinkle of mozzarella cheese, and Parmesan cheese. Serve immediately for a cozy dinner.
