Make incredibly juicy and flavorful chicken skewers using this simple Honey Garlic marinade. This recipe works perfectly for grilling, baking in the oven, or cooking in an air fryer, making it a quick and family-friendly weeknight dinner or party appetizer.

  • 2 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • 1/2 cup honey
  • 1/4 cup low-sodium soy sauce
  • 4 cloves garlic, minced
  • 2 Tbsp rice vinegar
  • 1 Tbsp sesame oil
  • 1 tsp ground ginger
  • 1/2 tsp black pepper
  • Wooden or metal skewers (soak wooden skewers in water for 30 minutes before use)

Instructions

  1. In a bowl, whisk together the honey, soy sauce, minced garlic, rice vinegar, sesame oil, ground ginger, and black pepper to create the marinade.
  2. Place the cubed chicken into a large zip-top bag or shallow dish. Pour half of the marinade over the chicken, reserving the other half for basting later. Seal and toss to coat evenly. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours for deeper flavor.
  3. If grilling, preheat your grill to medium-high heat (about 400°F). If baking, preheat your oven to 400°F (200°C) and line a baking sheet with foil.
  4. Thread the marinated chicken pieces onto the prepared skewers, leaving a small space between each piece. Discard the marinade that touched the raw chicken.
  5. For Grilling: Place skewers on the preheated grill grates. Cook for 10-12 minutes, turning every few minutes, until the chicken is cooked through and has nice grill marks. Baste with the reserved marinade during the last 2 minutes of cooking.
  6. For Oven Baking: Arrange the skewers on the prepared baking sheet. Bake for 18-22 minutes, flipping halfway through. Brush with the reserved marinade during the last 5 minutes of baking.
  7. For Air Frying: Place skewers in the air fryer basket in a single layer (work in batches if needed). Cook at 380°F (195°C) for 10-14 minutes, flipping halfway and brushing with reserved marinade during the last few minutes.
  8. Remove the chicken skewers from the heat. Let them rest for 5 minutes before serving.

Notes

  • For extra color and flavor, thread pieces of bell pepper, onion, or pineapple between the chicken cubes on your skewers.
  • If you prefer a thicker glaze, simmer the reserved marinade in a small saucepan over medium heat for 3-5 minutes until it reduces slightly, then use it for basting.
  • This recipe makes a great appetizer or a main course served over rice.
