Get all the rich, cheesy flavor of classic lasagna in a warm, slurp-worthy bowl. This hearty Instant Pot Lasagna Soup is a family-friendly, one-pot dinner ready fast, perfect for busy weeknights.

Ingredients

  • 1 pound ground beef or Italian sausage
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 28 ounces crushed tomatoes
  • 32 ounces beef broth
  • 10 ounces lasagna noodles, broken into 2-inch pieces
  • 1/2 cup heavy cream (or half-and-half)
  • 4 ounces cream cheese, cubed
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Set the Instant Pot to the Sauté function. Add the ground beef and cook until browned, breaking it up with a spoon. Drain any excess grease.
  2. Add the chopped onion to the pot and cook until softened, about 3 minutes. Add the minced garlic, basil, oregano, salt, and pepper. Cook for 1 minute until fragrant.
  3. Pour in the crushed tomatoes and beef broth. Stir well, scraping up any browned bits from the bottom of the pot.
  4. Add the broken lasagna noodles to the liquid. Do not stir after adding the noodles to prevent clumping.
  5. Secure the lid and set the valve to Sealing. Cook on High Pressure for 4 minutes.
  6. When the cooking time is complete, perform a Quick Release of the pressure.
  7. Open the lid carefully. Stir in the heavy cream, cubed cream cheese, and Parmesan cheese until the cheeses are melted and the soup is creamy.
  8. Stir in half of the mozzarella cheese until melted.
  9. Ladle the soup into bowls. Top each serving with the remaining mozzarella cheese and fresh parsley. Serve immediately.

Notes

  • For a richer flavor, substitute half the ground beef with Italian sausage.
  • If you do not have an Instant Pot, you can make this on the stove by simmering covered for 20 minutes after adding the noodles.
  • Stir in a dollop of ricotta cheese when serving for an extra layer of traditional lasagna flavor.
