Make this simple, comforting ground beef and zucchini casserole for a satisfying weeknight dinner. It is an easy one dish ground beef meal that fits a busy schedule.

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 medium zucchini, sliced about 1/4 inch thick
  • 1 (15 ounce) can tomato sauce
  • 1/2 cup beef broth
  • 1/2 cup shredded cheddar cheese (optional, for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
  2. Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up as it cooks. Drain off any excess fat.
  3. Add the chopped onion to the skillet and cook until softened, about 5 minutes.
  4. Stir in the minced garlic, oregano, salt, and pepper. Cook for 1 minute until fragrant.
  5. Spread half of the cooked ground beef mixture evenly in the bottom of the prepared baking dish.
  6. Arrange half of the zucchini slices over the meat layer.
  7. Pour half of the tomato sauce and half of the beef broth over the zucchini layer.
  8. Repeat the layers: remaining ground beef mixture, remaining zucchini, remaining tomato sauce, and remaining beef broth.
  9. Cover the baking dish tightly with aluminum foil.
  10. Bake for 30 minutes.
  11. Remove the foil and sprinkle the shredded cheddar cheese over the top, if using.
  12. Return the dish to the oven, uncovered, and bake for another 10 to 15 minutes, or until the zucchini is tender and the cheese is melted and bubbly.
  13. Let the casserole rest for 5 minutes before serving.

Notes

  • For a low carb beef and zucchini option, omit the beef broth if it contains added sugar, or use low sodium broth.
  • You can substitute ground turkey for ground beef in this recipe.
  • If you prefer a cheesier casserole, increase the cheddar cheese to 1 cup.
