Make addictive, restaurant-quality garlic noodles at home in under 20 minutes. This easy Asian noodle recipe uses simple pantry staples to create a rich, savory, and slightly sticky sauce that coats every strand perfectly.

  • 12 oz spaghetti or preferred Asian noodles
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced finely
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sugar
  • 1/4 cup reserved pasta water
  • 2 tablespoons grated Parmesan cheese (optional)
  • 1 green onion, sliced for garnish

Instructions

  1. Cook the noodles according to package directions until al dente. Before draining, reserve about 1/2 cup of the starchy pasta water. Drain the noodles and set aside.
  2. While the noodles cook, prepare the sauce. In a large skillet or wok over medium heat, melt the butter.
  3. Add the minced garlic to the melted butter and sauté for about 1 minute until fragrant. Do not let the garlic brown.
  4. Stir in the soy sauce, oyster sauce, sesame oil, and sugar. Mix well until the sugar dissolves.
  5. Add the cooked noodles to the skillet. Toss to coat them evenly in the sauce.
  6. Pour in 1/4 cup of the reserved pasta water. Toss continuously until the sauce thickens slightly and creates a glossy, sticky coating on the noodles. Add more pasta water, one tablespoon at a time, if the sauce seems too dry.
  7. Remove the skillet from the heat. If using, toss in the Parmesan cheese until melted and incorporated.
  8. Transfer the garlic noodles to serving bowls. Garnish with sliced green onions before you serve them immediately.

Notes

  • For a spicy kick, add 1 teaspoon of chili garlic sauce or a pinch of red pepper flakes when you add the soy sauce.
  • Use spaghetti, linguine, or dried chow mein noodles for the best texture in this quick noodle dinner.
  • This recipe is naturally vegetarian if you omit the oyster sauce or substitute it with vegetarian oyster sauce.
