  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice, uncooked
  • 2 cups chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup cream cheese, cut into cubes

Instructions

  1. Melt the butter in a medium saucepan over medium heat. Add the chopped onion and cook until softened, about 4 minutes.
  2. Add the minced garlic and cook for 1 minute until fragrant.
  3. Stir in the uncooked rice and cook for 2 minutes, stirring constantly, until the edges of the grains look slightly translucent.
  4. Pour in the chicken broth, salt, and pepper. Bring the mixture to a boil.
  5. Once boiling, reduce the heat to low, cover the saucepan tightly, and simmer for 18 minutes without lifting the lid.
  6. Remove the saucepan from the heat and let it stand, covered, for 5 minutes. Do not lift the lid during this resting period.
  7. Remove the lid. Add the shredded cheddar cheese, Monterey Jack cheese, and cubed cream cheese to the rice.
  8. Stir gently until all the cheese is melted and the rice is creamy and coated. Serve warm immediately.

Notes

  • For a richer flavor, substitute half of the chicken broth with whole milk.
  • If you want a tangier flavor, substitute 1/4 cup of the cheddar cheese with grated Parmesan cheese.
