1 pound rotini pasta
1 tablespoon olive oil
1 pound ground beef
1 teaspoon dried Italian seasoning
1/2 teaspoon garlic powder
1/4 teaspoon salt
1 (24 ounce) jar pizza sauce
1 (14.5 ounce) can diced tomatoes, drained
1 1/2 cups water
1 cup shredded mozzarella cheese, divided
1/2 cup shredded Parmesan cheese
1/2 cup mini pepperoni slices
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
Cook the rotini pasta according to package directions until al dente. Drain the pasta and set it aside.
While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the ground beef, Italian seasoning, garlic powder, and salt. Cook until the beef is browned. Drain any excess grease.
Stir the pizza sauce, drained diced tomatoes, and water into the skillet with the ground beef. Bring the mixture to a simmer.
Remove the skillet from the heat. Stir in the cooked pasta and 1 cup of the mozzarella cheese until everything is well combined.
Pour the pasta mixture into the prepared baking dish. Sprinkle the remaining 1/2 cup of mozzarella cheese and the Parmesan cheese evenly over the top. Scatter the mini pepperoni slices over the cheese layer.
Bake for 20 to 25 minutes, or until the casserole is bubbly and the cheese is melted and lightly golden brown.
Let the casserole rest for 5 minutes before you serve it.
Notes
For a heartier meal, substitute ground turkey or Italian sausage for the ground beef.
You can prepare this entire casserole ahead of time, cover it, and refrigerate it for up to 24 hours. Add about 10 minutes to the baking time if baking directly from the refrigerator.
Use your favorite pizza toppings in place of pepperoni, such as sliced mushrooms or cooked sausage.
