Make these tender carrots coated in a sweet and savory honey garlic butter glaze. This simple roasted vegetable side dish is perfect for weeknight dinners or holiday meals.

  • 2 lbs carrots, peeled and sliced into 1-inch pieces
  • 4 tablespoons unsalted butter, melted
  • 3 tablespoons honey
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (optional garnish)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Toss the sliced carrots with the melted butter, honey, minced garlic, salt, and pepper in a large bowl until the carrots are evenly coated.
  3. Spread the coated carrots in a single layer on a baking sheet lined with parchment paper.
  4. Roast for 20 to 25 minutes, stirring halfway through, until the carrots are tender and the glaze is slightly caramelized.
  5. Remove from the oven, garnish with fresh parsley if using, and serve immediately as a sweet and savory side dish.

Notes

  • For extra flavor, add 1/4 teaspoon of onion powder to the glaze mixture.
