Ingredients
Scale
1 box (15.25 ounces) strawberry cake mix
1/2 cup vegetable oil
2 large eggs
1/2 cup water
1/2 cup fresh strawberries, finely diced (optional, for extra flavor)
1 cup powdered sugar (for glaze)
2 tablespoons milk or water (for glaze)
1/2 teaspoon strawberry extract (optional, for glaze)
Instructions
Preheat your oven to 350°F (175°C). Lightly grease and line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
In a large bowl, combine the strawberry cake mix, vegetable oil, eggs, and water. Mix with a spoon or electric mixer on low speed until just combined. Do not overmix.
If using, gently fold in the finely diced fresh strawberries.
Spread the batter evenly into the prepared baking pan.
Bake for 20 to 25 minutes, or until a toothpick inserted near the center comes out with moist crumbs attached, not wet batter. This ensures a fudgy texture.
Let the brownies cool completely in the pan on a wire rack.
While cooling, prepare the glaze: Whisk together the powdered sugar, milk (or water), and strawberry extract (if using) until smooth. Add more liquid, one teaspoon at a time, if the glaze is too thick.
Once the brownies are cool, drizzle the strawberry glaze evenly over the top.
Allow the glaze to set before cutting into squares.
Notes
For a richer, fudgier texture, reduce the water in the batter to 1/4 cup.
If you want pink brownies, skip the fresh strawberries in the batter and rely on the cake mix color.
These bars are excellent for quick strawberry dessert ideas or Valentine’s Day treats.
