Easy Ground Beef Dorito Casserole

Make this classic, comforting Dorito Casserole for a quick weeknight family dinner. It features layers of seasoned ground beef, creamy sauce, cheese, and crunchy chips.

Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 (10 ounce) can red enchilada sauce
  • 1 cup water
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 bag (9.25 ounces) Nacho Cheese flavored Doritos, lightly crushed
  • 1/2 cup sour cream (for topping, optional)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Cook the ground beef and chopped onion in a large skillet over medium heat until the beef is browned and the onion is soft. Drain off any excess grease.
  3. Stir the cream of chicken soup, enchilada sauce, water, chili powder, cumin, and garlic powder into the skillet with the meat mixture. Bring the mixture to a simmer.
  4. Remove the skillet from the heat. Stir in half of the shredded cheddar cheese and half of the Monterey Jack cheese until melted and combined.
  5. Spread about two-thirds of the crushed Doritos into the bottom of the prepared baking dish.
  6. Pour the meat and cheese mixture evenly over the layer of chips.
  7. Sprinkle the remaining shredded cheeses over the top of the meat mixture.
  8. Bake for 20 minutes, or until the casserole is bubbly.
  9. Remove the dish from the oven. Top with the remaining crushed Doritos and return to the oven for 5 more minutes to warm the chips slightly.
  10. Let the casserole rest for 5 minutes before serving. Top individual servings with sour cream, if desired.

Notes

  • For a different flavor profile, substitute cream of mushroom soup for cream of chicken soup.
  • You can use ground turkey or shredded cooked chicken instead of ground beef for a variation.
  • Crush the Doritos by placing them in a large zip-top bag and rolling a rolling pin over them a few times.
