  • 1.5 lbs boneless, skinless chicken breasts
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1 (15 ounce) can great northern beans, rinsed and drained
  • 1 (4 ounce) can diced green chilies, undrained
  • 1 (10 ounce) can mild diced green chilies, undrained
  • 1 (10.5 ounce) can cream of chicken soup
  • 1 cup chicken broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • 4 ounces cream cheese, cut into cubes (optional, for extra creaminess)

Instructions

  1. Place the chicken breasts in the bottom of your slow cooker.
  2. Top the chicken with the rinsed and drained cannellini beans and great northern beans.
  3. Add both cans of diced green chilies (undrained) over the beans.
  4. Pour in the cream of chicken soup and chicken broth.
  5. Sprinkle the cumin, oregano, and garlic powder over the top. Season with salt and pepper.
  6. Cover the slow cooker and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours, until the chicken is cooked through and tender.
  7. Remove the chicken breasts from the slow cooker and shred them using two forks. Return the shredded chicken to the chili.
  8. If using, stir in the cubed cream cheese until it melts completely and the chili becomes creamy.
  9. Stir everything together well. Taste and adjust seasonings if needed before serving.

Notes

  • Serve this hearty winter chili topped with shredded Monterey Jack cheese, a dollop of sour cream, and fresh cilantro.
  • For a slightly spicier dish, add 1/4 teaspoon of cayenne pepper with the other spices.
