1 pound chicken sausage, sliced
1 tablespoon olive oil
1 medium yellow onion, chopped
3 cloves garlic, minced
1 teaspoon dried Italian seasoning
1 teaspoon smoked paprika

1 (14.5 ounce) can diced tomatoes, undrained
1 cup chicken broth
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
2 cups fresh spinach
12 ounces penne pasta
Instructions
Cook the sliced chicken sausage in olive oil in a large skillet over medium heat until browned, about 5 minutes. Remove the sausage and set it aside.
Add the chopped onion to the same skillet and cook until softened, about 4 minutes.
Add the minced garlic, Italian seasoning, and smoked paprika. Cook for 1 minute until fragrant.
Pour in the diced tomatoes (with their juice) and chicken broth. Bring the mixture to a simmer.
Stir in the penne pasta. Cover the skillet and cook for 10 to 12 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
Reduce the heat to low. Stir in the heavy cream and Parmesan cheese until the sauce is smooth and creamy.
Return the cooked chicken sausage to the skillet. Stir in the fresh spinach until it wilts into the sauce.
Taste and adjust salt and pepper as needed before serving immediately.
