Make this satisfying, one-pan Creamy Crack Chicken Gnocchi dinner. It combines tender chicken, soft gnocchi, bacon, and a rich bacon ranch cream cheese sauce for a quick, comforting meal.

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 4 slices bacon, cooked and crumbled
  • 1 (16 ounce) package potato gnocchi
  • 1/2 cup chicken broth
  • 8 ounces cream cheese, cut into cubes
  • 1/2 cup heavy cream
  • 1 packet (1 ounce) dry ranch seasoning mix
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Parmesan cheese
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set aside.
  2. Add the crumbled bacon to the skillet and cook for 1 minute to warm it through.
  3. Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet. Add the gnocchi to the skillet.
  4. Stir in the cream cheese cubes, heavy cream, and dry ranch seasoning mix. Bring the mixture to a gentle simmer, stirring constantly until the cream cheese melts and the sauce thickens slightly, about 3 to 4 minutes.
  5. Return the cooked chicken to the skillet. Stir in the cheddar cheese and Parmesan cheese until the cheese melts and the sauce is smooth and creamy.
  6. Season with salt and pepper as needed. Cook for 1 more minute until everything is heated through.
  7. Serve immediately, garnished with fresh parsley.

  • For a lower-fat option, substitute half-and-half for the heavy cream, though the sauce will be slightly thinner.
  • You can use pre-cooked rotisserie chicken instead of raw chicken to save time. Add it in Step 5 when you add the cheese.
  • If you prefer a baked version, transfer the mixture to a baking dish after Step 5, top with extra cheese, and bake at 375°F for 10 minutes until bubbly.
