1 pound ground beef
1 medium onion, chopped
2 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon dried oregano
1/4 teaspoon smoked paprika
4 cups beef broth
1 (14.5 ounce) can diced tomatoes, undrained
1 (15 ounce) can kidney beans, rinsed and drained
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can corn, drained
1 cup diced potatoes (optional, for thickness)
Salt and black pepper to taste
Optional: 1/2 cup heavy cream for a creamy variation
Instructions
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the ground beef and cook until browned. Drain off any excess fat.
Add the chopped onion to the pot and cook until softened, about 5 minutes.
Stir in the minced garlic, chili powder, cumin, oregano, and smoked paprika. Cook for 1 minute until fragrant.
Pour in the beef broth and add the diced tomatoes (with their juice). If using potatoes, add them now. Bring the mixture to a simmer.
Reduce the heat to low, cover, and cook for 15 minutes, or until the potatoes are tender if you added them.
Stir in the rinsed kidney beans, black beans, and drained corn. Heat through for about 5 minutes.
Season the soup with salt and pepper to your taste.
For a creamy cowboy soup variation, stir in the heavy cream during the last 5 minutes of cooking. Do not boil after adding cream.
Serve this hearty soup hot, perhaps with cornbread for a complete meal.
Notes
For a slow cooker cowboy soup, brown the beef and sauté the onion/garlic first, then combine all ingredients (except cream) in the slow cooker. Cook on low for 6-8 hours or high for 3-4 hours. Stir in cream if desired before serving.
Add a dash of hot sauce or a pinch of cayenne pepper if you prefer a slightly spicy cowboy soup.
