Make soft and chewy Christmas sprinkle sugar cookies that require no dough chilling and use a single bowl for simple holiday baking. These buttery cookies are packed with festive red and green sprinkles.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup Christmas sprinkles (red, green, holiday shapes)
  • Extra sprinkles for rolling

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until just combined.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. Gently fold in the 1/2 cup of Christmas sprinkles.
  7. Place extra sprinkles on a shallow plate. Scoop dough, roll into balls, and then gently roll each ball in the extra sprinkles to coat the outside.
  8. Place dough balls onto the prepared baking sheets, leaving about 2 inches between them. Gently press down slightly with the bottom of a glass to flatten them into thick discs.
  9. Bake for 9 to 11 minutes, or until the edges are set but the centers still look slightly soft. These are soft batch cookies.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For the softest cookies, avoid overbaking; remove them when the edges just begin to turn light gold.
  • You can substitute brown sugar for 1/4 cup of the granulated sugar for a slightly chewier texture.
  • These are excellent family friendly Christmas treats for kids Christmas baking projects.
  • Store cooled cookies in an airtight container at room temperature for up to five days.
