  • 6 cups high-quality chicken broth
  • 2 cups cooked, shredded chicken (rotisserie chicken works well)
  • 1 cup egg noodles
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 medium yellow onion, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and black pepper to taste
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the chopped onion, sliced carrots, and celery to the pot. Cook until the vegetables soften, about 5 to 7 minutes.
  3. Stir in the dried thyme and rosemary. Cook for 1 minute until fragrant.
  4. Pour in the chicken broth. Add the bay leaf. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15 minutes, or until the vegetables are tender.
  5. Increase the heat to medium and add the egg noodles. Cook according to package directions until they are al dente.
  6. Stir in the shredded cooked chicken. Heat through for about 2 minutes. Do not overcook the chicken.
  7. Remove and discard the bay leaf. Season the soup generously with salt and black pepper to your taste.
  8. Ladle the chicken noodle soup into bowls and garnish each serving with fresh chopped parsley.

Notes

  • For a richer broth flavor, use homemade chicken stock instead of store-bought broth.
  • If you are making this ahead, cook the noodles separately and add them just before serving to prevent them from becoming too soft.
  • You can substitute dried herbs with 1 tablespoon of fresh herbs, added during the last 5 minutes of simmering.
