  • 2 pounds russet potatoes, peeled and diced small
  • 3 tablespoons cooking oil
  • 1 pound ground beef
  • 1 packet (1 ounce) taco seasoning mix
  • 1/2 cup water
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 2 cups shredded cheddar cheese
  • Optional toppings: sour cream, salsa, chopped cilantro

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Toss the diced potatoes with the cooking oil, salt, and pepper on a large, oven-safe skillet or baking sheet.
  3. Roast the potatoes for 20 minutes until they begin to soften and brown slightly.
  4. While potatoes roast, cook the ground beef in a separate pan over medium heat until fully browned. Drain off any excess fat.
